Perfect Magic Porridge with True Collagen
2 Min read
A ritual in a bowl for the darker mornings - inspired by spooky season. Using the ancient grain spelt, simmered into a warming, nutty porridge; swirled through with a deep ruby raspberry and chia "elixir". Chia thickens the raspberry swirl into something closer to a potion than a jam, and walnuts and goji berries finish the spell with crunch and colour.

Makes 2 servings
Ingredients:
+ 4 tbsp Chai Syrup (recipe below) (2 tbsp per serving, or to taste)
+ 100g spelt flakes
+ 500ml milk of your choice
+ 2 tbsp chia seeds
+ 150g frozen raspberries
+ 2 tbsp goji berries
+ 2 tbsp walnuts, roughly chopped
Method:
- Make your Chai Syrup using the recipe below and keep aside.
-
Make the spelt porridge by simmering the spelt flakes with the milk over a medium-low heat for 5–8 minutes, stirring regularly, until thick and creamy.
-
Meanwhile, in a separate small saucepan (or cauldron if you will), add the frozen raspberries, a splash of water and the chia seeds.
-
Simmer gently for 5–6 minutes, stirring occasionally and breaking down the raspberries, until it thickens into a jammy, ruby-dark elixir.
-
Divide the porridge between two bowls and swirl through the Chai Syrup.
-
Spoon over a generous amount of the raspberry chia elixir, then finish the potion with a scatter of walnuts and goji berries.
