Delicious Cacao + Goji Berry Cake
Ingredients
2 tsp cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
60g almond butter
240 g almond milk
2 tsp vanilla extract
35g goji berries
50g Cacao + Collagen or cacao powder
6 tbsp honey
2 tbsp mashed ripe banana
2 tbsp extra virgin olive oil
Method:
This is an incredibly quick and easy recipe to make. Heat the oven to 180 °C. Mix all the ingredients in a bowl and stir until you have a smooth mixture.
You can then pour the mixture into a greased 9-inch cake tin and place it in the oven for 20 to 25 minutes. Sprinkle with raw cacao and True Collagen
Easy Cacao And Collagen Brownies
Ingredients
60g smooth almond butter (or hazelnut butter)
120g coconut sugar or similar
2 tbsp honey
80g Cacao + Collagen or cacao powder
1 generous pinch sea salt
2 tsp vanilla extract
2 fresh eggs (large)
40g oat flour (or finely ground rolled oats)
20g ground almonds or almond flour
80g roughly chopped walnuts or hazelnuts
Method:
Step 1: Preheat the oven to 180 °C (160 °C fan) and line a 20 × 20 cm tray with baking paper.
Step 2: Gently warm the olive oil and almond butter together in a small pan or bowl until just fluid, then take off the heat. Add the coconut sugar, honey, Cacao + Collagen and vanilla and mix until well combined (it may look a bit gritty at this stage, which is fine).
Step 3: One by one, whisk in the eggs, beating well after each addition. Once the mixture is glossy and thick, sift in the oat flour and ground almonds and fold until there are no dry pockets and the batter starts to pull away slightly from the sides of the bowl.
Step 4: Stir in the chopped nuts, then scrape the mixture into the lined baking tray and smooth the top.
Step 5: Bake for about 18–22 minutes. Then, insert a skewer into the centre. When the top has a light crust, and the skewer comes out with a few moist crumbs (but not wet batter), the brownies are done.
Step 6: Allow the brownies to cool completely before slicing and serving. Enjoy!

Best Cacao + Collagen Mousse
Ingredients
250g Silken Tofu
60g Cacao + Collagen
Drizzle of honey
Frozen or fresh raspberries with mixed seeds on the top
Method:
Step 1: Add the silken tofu and Cacao + Collagen into a food blender and blend until smooth and creamy
Step 2: Stir in the honey, then fill the mix into 4 small dessert bowls. Then, pop them into the fridge to let the mousse set.
Step 3: Once your mousse is ready to serve, top with frozen or fresh raspberries and mixed seeds, or any other toppings of choice.
