No-Bake Collagen Keto Cookies
Jenni Simper aka 'Miss Athletic World Champion', TRX expert and PT has taken some of our True Collagen and added it to the most satisfying snack to curb that afternoon lull.
She says, "These no-bake keto cookies are the ultimate craving snatchers! They’re crunchy, rich, creamy and fudge-like. With the addition of one of my favourite brands Ancient + Brave, it means they’re also packed full of amazing nutrients and healing properties, from the antioxidant-rich Peruvian chocolate, adaptogenic Siberian ginseng to the healing grass-fed collagen. Amazing for hair, skin and nails and also heals and nourishes muscles, cartilage and tissue damage caused from training. There's a hint of cinnamon too, which is my favourite spice'
Ingredients*2 tbsp real butter
*1 cup all-natural peanut butter (or your choice of nut butter)
*1 cup unsweetened all-natural shredded coconut
*4 drops of liquid stevia, organic vanilla extract or sugar-free flavoured drops [You can also use a granulated sweetener like Xylitol or monk fruit just add 2 tsp of butter when melting it]
For the brownies, I added 2 tbsp of Ancient + Brave Cacao + Collagen blend
1. In a microwave-safe dish, melt butter
Stir in peanut butter until smooth. If you chose to make these with cocoa powder, add it now. Add stevia and coconut. Mix well.
2. Scoop 2″ spoonfuls onto a sheet pan.
3. Freeze for 5-10 minutes.
4. Store in the fridge or I like them extra crunchy in the freezer.
